  Coto de hayas crianza is the mid-range wine of Bodegas Aragonesas, located in the DO Campo de Borja. The elaboration of Coto de Hayas crianza begins with a harvest during the second week of September. Once in the winery, the must ferments at a controlled temperature of 28ºC. Afterwards, a maceration is carried out for 15 days. Finally, Coto de Hayas Crianza is aged for 8 months in French and American oak barrels, culminating with the ageing process in the bottle. Coto de hayas crianza is a magnificent accompaniment to sausages and red meat.

Vineyards with more than 40 years in the case of Garnacha and 30 years in case of Tempranillo, cultivated at 600 meters of altitude.

Making notes

The harvest of the Tempranillo was performed during the third week of September and that of the Garnacha from the fourth week. Following the traditional processing method, it has been fermented at 28ºC with temperature control. A maceration was carried out over 15 days. After which, the malolactic fermentation of the two varieties separately was performed. Parent in American and French oak barrels for 9 months. The aging is completed in the same bottle.
