  Jean Foillard is an iconic winegrower in the Beaujolais region. With 40 years of experience behind him when he took the reins of the family estate in 1980 on the Côte du Py, the famous hill of the village of Morgon, with schist and granite soils that give the wines great complexity, Jean Foillard stands out for his work with old vines, without using chemicals, harvesting late, selecting the grapes berry by berry. Jean Foillard's first guideline before the harvest is to have healthy grapes, the result of good work in the vineyard. Another vital rule is to choose the exact moment to harvest; trying to be daring and patient waiting for the perfect ripeness.

The vineyards are around the Côte de Py, in the village of Villie-Morgon, on granite floors and blackboard

Making notes

The vintage was performed manually and without descalillar. Once in a cellar, cold carbon maceration (between 4 and 7ºC) took place. Normal yeasts were used to ferment the wine for 3-4 weeks, without sulphurous added. Later, the wine is aged for 5 months in stainless steel tanks.

Semicontinental climate tempered, something warmer than in the northernmost area of ​​Burgundy
