Jean Foillard stands out for his work with old vines, without using chemicals, harvesting late, selecting the grapes berry by berry.
Jean Foillard's first guideline before the harvest is to have healthy grapes, the result of good work in the vineyard. Another vital rule is to choose the exact moment to harvest; trying to be daring and patient waiting for the perfect ripeness.
