Making notes

Manual vintage in boxes of 15 kg. Early harvest, fundamental to maintain a good natural acidity in the grapes. Rigorous inspection at selection table, marked and pressing horizontal hydraulic press. Fermented at low temperature with the own autochthonous yeasts of the must subjected to severe mismante.

Climatología

The winter noted not to be especially cold, although he did have some episodes of frost and scarce rainfall. In the second half of the month of May, several days of strong frost were given, which caused an unequal incidence in each of the plots, reducing the performance of the vineyards and increasing the quality. The shortage of rain in recent months and high average temperatures during the maturation cycle endorsed that lower yield.
