  Verdling Trocken Seco De Ossian, a refined white of ordered fullness and soft and refreshing acidity, never rough, that gives a ripened and tasty fruit together with herbaceous aromas typical of the varietal. The grapes used to produce this dry Verdejo monovarietal come from old, pre-phylloxera vineyards, with very low yields, on soils with a high content of sand, gravel and pebbles of different sizes. On the nose, there are fruity and floral aromas, with touches of spices and wild herbs, while in the mouth it is balanced and tasty.

Making notes

Upon arriving at a cooling chamber during sufficient hours to lower their temperature. Cold maceration and entire grape pressing without collapsing. The pressing is very soft and very low yields. The must be defeated for 24 hours and ferments very clean. Long fermentation in small stainless steel tanks with indigenous natural yeasts at low temperatures.

Climatología

The winter noted not to be especially cold, although he did have some episodes of frost and scarce rainfall. In the second half of the month of May, several days of strong frost were given, which caused an unequal incidence in each of the plots, reducing the performance of the vineyards and increasing the quality. The shortage of rain in recent months and high average temperatures during the maturation cycle endorsed that lower yield.
