Making notes

After the usual field controls, the vintage of the selected plots to elaborate the most up-raising wine, the third week of September began the third week, the date on which the Grenachas were harvested. The grapes from all of them of farms of our property are collected in small boxes of 18 kg, and take them to the cellar where they are descarled and squeezed. Alcoholic fermentation starts at controlled temperature, after inoculating yeasts. During the days of fermentation the deposits are linked daily to decide the most suitable warehouse operations for each style of red wine. After the relevant analytics and an exhaustive tasting decides the date of discovery. After discovering, the wine carries out the malolactic fermentation in deposit and then undergo a barrel aging that in this case lasted 12 months.

Climatología

2014 was a year marked by a warm and promising spring, followed by an absolutely atypical summer in Priorat; Quite colder than usual, which prolonged the normal ripening times of grapes by significantly reducing the lack of sun and enlightenment. In addition the rains of mid-September forced us to pick up the harvest rapidly to avoid the dreaded consequences They pose the rains in vintage (rot and dilution of the grape). These rains arrived when all the Grenachas were already inside the cellar, however, the vintage of the Cariñenas had to be done quickly and with a careful selection because the rains surprised us when we were vaining them.
