Elaboración Dominio LongazMaking notes Dominio Longaz

Notas del Viñedo

We have 70 hectares of vineyards, in a single payment located next to the cellar, in the Pardina. Located at the foot of the Algairén Sierra, at an altitude of 550 meters. Soil formed by clays and very stony, called "Cascajo" in this area. They are floors that retain moisture and that also, due to its large amount of stone, they are suitable for the maturation of the grape.

Making notes

Elaborated with grapes from a selection of the best terroirs of our vineyard. The grape selected in a cellar and descarled is covered in stainless steel deposits where it is subjected to a cold pre-fermentative maceration for 5 days. Alcoholic fermentation is developed with autochthonous yeasts at controlled temperature. At the end of fermentation, it is discovered and pressed with a wooden cub it hydraulic vertical press to subsequently perform malolactic fermentation. 21-month aging of French oak barrel Allier. The bottling of this wine has been carried out without prior filtration, having stayed a total of 21 months in New French oak barrel Allier.
